Ingredients
- 4 chicken thighs boneless and skinless
- 4 beets medium-sized, peeled & chopped
- 3 tbsp olive oil
- 3 cloves garlic sliced or minced
- 1 tbsp honey or maple syrup
- 1 tbsp lemon juice or vinegar
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp dried thyme or oregano
- 1/2 cup chicken broth
Instructions
Prep Ingredients
- Peel and chop beetroot into chunks.
- Season chicken with salt, pepper, and paprika.
Layer in Slow Cooker
- Add beets to the bottom.
- Place chicken on top.
- Add garlic evenly over everything.
- Drizzle olive oil and honey.
- Add lemon juice and chicken broth.
- Sprinkle thyme or oregano.
Cook and Serve
- Cover and cook:
- Low: 6–7 hours
- High: 3–4 hours
- Serve hot with rice, mashed potatoes, or bread.
- Spoon juices over for extra flavor.
