Strawberry Cole Slaw

An easy, but nice, coleslaw with a sweet kick from the strawberries and raising, and a tart and tasty lemon dressing. Very versatile – festive and pretty for holidays, but nice and light for summer, too.

Ingredients

  • 1 carton lemon yogurt 8 oz
  • 1/4 cup mayonnaise
  • 2 T lemon juice fresh is best, of course
  • 3/4 t salt
  • 1/2 T pepper
  • 1 pkg coleslaw mix 16 oz.
  • 1 pint strawberries sliced
  • 1/2 cup raisins

Instructions

  • In a large bowl, whisk the yogurt, mayo, lemon juice, salt and pepper until blended.
  • Add the Cole slaw mix, strawberries and raisins.
  • Toss to mix.

The original recipe calls for 3/4 cup of thinly sliced scallions. That’s up to you; but, to a raw-onion hater, adding any kind of onions would totally ruin it!
Also, I usually double the raisins, since the lemon dressing is pretty tart.
