Lemon Poppy Seed Broccoli Salad

This is a quick tasty mix of broccoli, cranberries, sunflower seeds, almonds, and feta….all tossed in a creamy lemon-poppy seed dressing.

Ingredients

Salad

  • 6 cups broccoli raw, chopped in bite-sized pieces
  • 3/4 cup dried cranberries
  • 1/2 cup almonds sliced
  • 1/2 cup sunflower nuts shelled, roasted, and salted
  • 1/2 cup crumbled feta cheese OPTIONAL (but adds a lot)

Dressing

  • 2/3 cup mayonnaise full-fat is best
  • 1/4 cup whole milk
  • 1/4 cup heavy cream
  • 1/4 cup sugar substitute xylitol for fewer calories
  • 2 tbsp apple cider vinegar
  • 1 lemon zested
  • 2 tsp poppy seeds
  • Salt and pepper to taste

Instructions

  • Clean and chop broccoli into small bite-sized chunks.
  • In a large bowl, combine all salad ingredients (not dressing ingredients YET.)
  • Zest lemon to get 2 teaspoons of lemon zest.
  • In a small blender, add zest and all dressing ingredients EXCEPT poppy seeds. Season to taste and blend until smooth.
  • Stir poppy seeds into dressing, mixing thoroughly.
  • Pour dressing over salad ingredients and toss to combine. Cover and chill for 30 minutes to an hour. Toss again begore serving.
