Slow Cooker Chicken Taco Soup

This recipe is easy to make and can be garnished with a variety of items to customize to your taste.

Equipment

  • 1 Slow Cooker/Crock Pot

Ingredients

  • 1 cup salsa mild
  • 1 can black beans 15 oz
  • 1 can pinto beans 15 oz
  • 1 can corn 15 oz
  • 1 can diced tomatoes 14.5 oz
  • 3 T taco seasoning
  • 2 cups chicken broth
  • 1 lb boneless skinless chicken breasts

Optional toppings

  • cilantro chopped
  • sour cream or Greek yoghurt
  • shredded cheddar cheese
  • avocado diced
  • tortilla chips

Instructions

  • Add salsa. beans, corn, tomatoes, taco seasoning and chicken broth to the slow cooler and stir to combine well.
  • Place chicken breasts into the mixture, making sure they are mostly covered by liquid.
  • Cover and cook on low for about six hours, until chicken is tender.
  • Remove chicken to a cutting board and shred with two forks, or cut into bite-sized pieces.
  • Return shredded chicken to slow cooker and stir to combine.
  • Serve hot with your favorite toppings.
