Slow Cooker Chicken Taco Soup
This recipe is easy to make and can be garnished with a variety of items to customize to your taste.

- 1 Slow Cooker/Crock Pot
Ingredients
- 1 cup salsa mild
- 1 can black beans 15 oz
- 1 can pinto beans 15 oz
- 1 can corn 15 oz
- 1 can diced tomatoes 14.5 oz
- 3 T taco seasoning
- 2 cups chicken broth
- 1 lb boneless skinless chicken breasts
Optional toppings
- cilantro chopped
- sour cream or Greek yoghurt
- shredded cheddar cheese
- avocado diced
- tortilla chips
Instructions
- Add salsa. beans, corn, tomatoes, taco seasoning and chicken broth to the slow cooler and stir to combine well.
- Place chicken breasts into the mixture, making sure they are mostly covered by liquid.
- Cover and cook on low for about six hours, until chicken is tender.
- Remove chicken to a cutting board and shred with two forks, or cut into bite-sized pieces.
- Return shredded chicken to slow cooker and stir to combine.
- Serve hot with your favorite toppings.
