Heathy Lunch

This is a recipe for a quick and healthy lunch/brunch egg bake.

Ingredients

  • 2 sweet potatoes
  • 1 cup broccoli chopped
  • 1/2 cup peas
  • 1/4 red onion I would skip this…yuck
  • 3 eggs whisked and seasoned with salt and pepper
  • 1 handful cheese shredded

Instructions

  • Preheat oven to 350.
  • Cook sweet potatoes until soft. Microwave, roast, or air fry.
  • Prep a 9-inch dish by coating with olive oil or butter.
  • Smash the sweet potato to cover the bottom of the dish.
  • Add the veggies and pour the whisked egg over the top. Sprinkle with cheese.
  • Bake for 30 – 40 minutes until golden brown.
