Heathy Lunch
This is a recipe for a quick and healthy lunch/brunch egg bake.
Ingredients
- 2 sweet potatoes
- 1 cup broccoli chopped
- 1/2 cup peas
- 1/4 red onion I would skip this…yuck
- 3 eggs whisked and seasoned with salt and pepper
- 1 handful cheese shredded
Instructions
- Preheat oven to 350.
- Cook sweet potatoes until soft. Microwave, roast, or air fry.
- Prep a 9-inch dish by coating with olive oil or butter.
- Smash the sweet potato to cover the bottom of the dish.
- Add the veggies and pour the whisked egg over the top. Sprinkle with cheese.
- Bake for 30 – 40 minutes until golden brown.
