Ingredients

  • 1 lb boneless skinless chicken breasts cut into bite-sized pieces
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 red onion diced
  • 1 cup unsalted cashews
  • ¼ cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 clove garlic minced
  • 1 teaspoon minced fresh ginger
  • Salt and black pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • Whisk soy sauce, honey, vinegar, sesame oil, garlic, and ginger in a bowl.
  • Toss chicken in marinade and let sit for at least 15 minutes.
  • Arrange chicken, peppers, and onion on a sheet pan in a single layer.
  • Pour leftover marinade over the top. Season with salt and pepper.
  • Bake for 20 minutes, then stir everything on the pan.
  • Add cashews, return to oven for 10–15 minutes until chicken is golden and cooked through.
  • Garnish with cilantro and serve hot over rice or cauliflower rice.
