Ingredients
- 1 lb boneless skinless chicken breasts cut into bite-sized pieces
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- 1 red onion diced
- 1 cup unsalted cashews
- ¼ cup soy sauce
- 3 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 3 clove garlic minced
- 1 teaspoon minced fresh ginger
- Salt and black pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Whisk soy sauce, honey, vinegar, sesame oil, garlic, and ginger in a bowl.
- Toss chicken in marinade and let sit for at least 15 minutes.
- Arrange chicken, peppers, and onion on a sheet pan in a single layer.
- Pour leftover marinade over the top. Season with salt and pepper.
- Bake for 20 minutes, then stir everything on the pan.
- Add cashews, return to oven for 10–15 minutes until chicken is golden and cooked through.
- Garnish with cilantro and serve hot over rice or cauliflower rice.
