Aunt Margie’s Oatmeal Cake
This is a moist dense cake with a wonderful frosting.

Ingredients
Cake
- 1 1/2 cup water Boiling
- 1 cup Oatmeal – Quick Oats
- 1/2 cup butter
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs
- 1 1/2 cup white flour or use 3/4 cup white and 1/4 cup wheat
- 1 t baking soda
- 1 t cinnamon
- 1/2 t salt
- 1 t vanilla
Frosting:
- 1/2 cup butter
- 1 cup brown sugar
- 1/2 cup evaporated milk
- 1 t vanilla
- 1 can coconut
- 1/2 cup nutmeats
Instructions
Cake:
- Pour boiling water over oatmeal and let stand 20 minutes.
- Preheat oven to 350.
- Grease a 9×13 pan.
- Cream butter, brown sugar, and sugar together.
- Beat in eggs.
- Mix cinnamon, soda, and salt together and add to the creamed mixture.
- Add vanilla to the mixture and beat well.
- Add the oatmeal to the mixture and mix well.
- Bake 30 minutes.
- Frost cake while still warm
Frosting:
- Bring butter, brown sugar, evaporated milk, and vanilla to a full boil, and boil for 10 minutes.
- Add coconut and nuts.
- Frost cake warm.
