Aunt Margie’s Oatmeal Cake

This is a moist dense cake with a wonderful frosting.

Ingredients

Cake

  • 1 1/2 cup water Boiling
  • 1 cup Oatmeal – Quick Oats
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cup white flour or use 3/4 cup white and 1/4 cup wheat
  • 1 t baking soda
  • 1 t cinnamon
  • 1/2 t salt
  • 1 t vanilla

Frosting:

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup evaporated milk
  • 1 t vanilla
  • 1 can coconut
  • 1/2 cup nutmeats

Instructions

Cake:

  • Pour boiling water over oatmeal and let stand 20 minutes.
  • Preheat oven to 350.
  • Grease a 9×13 pan.
  • Cream butter, brown sugar, and sugar together.
  • Beat in eggs.
  • Mix cinnamon, soda, and salt together and add to the creamed mixture.
  • Add vanilla to the mixture and beat well.
  • Add the oatmeal to the mixture and mix well.
  • Bake 30 minutes.
  • Frost cake while still warm

Frosting:

  • Bring butter, brown sugar, evaporated milk, and vanilla to a full boil, and boil for 10 minutes.
  • Add coconut and nuts.
  • Frost cake warm.
