Pasta e Fagioli for Instant Pot (Olive Garden Style)

This is the best soup recipe! It's easy to make in the Instant Pot, relatively healthy to eat, and it tastes just as good as the stuff at Olive Garden!

Equipment

  • 1 Instant Pot

Ingredients

  • 1 1/2 lb Italian sausage I prefer sweet, but mild or hot would work
  • 1 T olive oil
  • 1 onion small and finely diced
  • 1 c carrots shoestring is best, or chopped into small pieces
  • 1 c celery diced
  • 3 cloves garlic minced or pressed
  • 1 can tomato sauce 16 oz
  • 1 can diced tomatoes with juice 15 oz
  • 1 t basil
  • 1 t oregano
  • 1 can red kidney beans drained
  • 1 can great northern beans drained
  • 1 c ditalini pasta
  • 1 T olive oil
  • 4 c chicken broth organic is best

Instructions

  • Set instant pot to saute and add a tablespoon of olive oil. When hot, add the sausage and cook until no pink remains.
  • While cooking, add onions, garlic, and celery. Cook for at least three minutes.
  • Add 1/2 cup chicken broth and scrape the bottom of the pot to remove anything browned onto the bottom.
  • Add the remaining broth, tomato sauce, diced tomatoes, beans, pasta, and spices.
  • Lock the lid and cook on Pressure Cook setting for 3 minutes. Allow pressure to naturally release for 10 minutes.
