Any Fruit Cobbler

Really nice, easy-to-make cobbler that works with pretty much any kind of fruit. I usually make it with fresh blueberries.

Ingredients

  • 2 c fruit double the fruit is better…can use fresh berries, canned fruit, pretty much anything
  • 1 c sugar divided
  • 1/4 t cinnamon
  • 1 c flour
  • 1 t baking powder
  • 1 t salt
  • 1/4 c butter
  • 1 egg
  • 1/2 c milk
  • 1 t vanilla

Instructions

  • Combine fruit and 1/2 cup sugar (less if the fruit is canned or sweetened) and spread evenly in a well-greased 8-inch square pan.
  • Mix remaining 2/3 cup sugar, cinnamon, flour, baking powder, and salt together.
  • Cut in butter.
  • Beat in egg, milk, and vanilla.
  • Spread over fruit and bake at 350 for 35 minutes until brown on top.
