Healthy Granola

This rs Dave's favorite granola. The recipe is from Bonnie in Austin. It's adapted from a couple of other recipes from "Cookie and Kate" and "Meg Gordon's Granola".

Ingredients

  • 4 cups oatmeal old fashioned rolled oats
  • 1 cup pecans
  • 1/2 cup pepitas
  • 1 tsp sea salt fine grain
  • 1/2 tsp cinnamon
  • 1/2 cup coconut oil melted
  • 1/2 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 2/3 cup dried cranberries or sub other dried fruit

Instructions

  • Preheat oven to 350 degrees and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine oats, nuts/seeds, salt and cinnamon. Mix well.
  • Pour in the oil, maple syrup and vanilla. Mix well until every oat and nut is coated.
  • Pour the granola onto the prepared pan and spread into and even layer with a large spoon.
  • Bake until lightly golden, 21 to 24 minutes, stirring halfway. The granola will crisp as it cools.
  • Cool the granola completely (undisturbed) for at least 45 minutes.
  • Top with dried fruit. Break into pieces if you prefer clumps, or stir with a spoon for a finer texture.
  • Store in an airtight container at room temp for 1 to 2 weeks, or in a sealed freezer bag for up to 3 months.

Notes

You can add coconut flakes halfway through baking so that it toasts. Substitute any kinds of nuts or seeds or dried fruit for variety.
