Baked Burrito Casserole

This casserole wraps up all the good stuff in one epic Tex Mex dish! Add some guacamole and black olives on the side to make it perfect.

Equipment

Ingredients

  • 1 tsp olive oil
  • 1 lb ground beef or ground turkey
  • ½ cup chopped onion
  • 1 packet taco seasoning
  • 1 can refried beans 15 oz
  • 1 can cream of mushroom soup
  • 1/2 cup sour cream
  • 2 cups shredded Mexican blend cheese
  • 6 flour tortillas large

Instructions

  • Preheat oven to 350°F (175°C).
  • Grease bottom and sides of a 13 x 9 baking dish.
  • In a large skillet, cook ground beef and onion until beef is no longer pink; drain excess fat.
  • Stir in taco seasoning with a splash of water and refried beans; heat through.
  • In a bowl, mix mushroom soup and sour cream until blended.
  • Spread half of the soup mixture in the bottom of a baking dish.
  • Arrange a layer of 3 tortillas over a sour cream-soup mixture slightly overlapping them. 
  • Layer half of the beef mixture over the tortillas and sprinkle with half of the cheese.
  • Repeat layers, ending with a layer of cheese.
  • Bake for 20 minutes or until the cheese is melted and bubbly.
