Waffle Mix

This is a great waffle mix shared by Sharon Adler. It can be used for small or large batches. You can even premix the dry ingredients and add wet ingredients later to quickly make small batches.
Notes:
You can mix and store a batch of the dry ingredients for use in smaller batches. To make two waffles, you may use:
1 cup dry mix
1 egg
2 T oil
3/4 milk

Ingredients

  • 2 1/4 cup flour sifted
  • 4 tsp baking powder
  • 3/4 tsp salt
  • 1 1/2 tbsp sugar
  • 2 egg
  • 2 1/4 cup milk
  • 1/2 cup canola oil or substitute oil of your choice

Instructions

  • Sift together dry ingredients (flour, baking powder, salt, sugar).
  • Mix beaten egg, milk, and oil together. Feel free to add pecans, blueberries, etc.
  • Add liquid ingredients to dry ingredients only until moistened.
  • Pour 3/4 cup batter into standard-size waffle iron.
