
Thai Noodles with Vegetables and Peanuts
This is a really tasty and flavorful vegetarian dish. It is prepared right on the stovetop. You can change out the vegetables to customize the dish.

Equipment
- 1 large pot for cooking noodles
- 1 medium-sized sauce pan for cooking the sauce
Ingredients
- 1 pkg brown rice noodles 12 oz
- 2 T ginger grated
- 3 clv garlic grated or minced
- 1/3 cup peanut butter
- 2 T maple syrup
- 3 T soy sauce
- 2 pkg frozen stir fry vegetables 16 – 24 ounces
- 1 pinch red pepper flakes optional
- 1 pinch seas salt to taste
Instructions
- Cook noodles according to package instructions.
- Grate the ginger and garlic.
- Assemble the sauce in a mediuml-sized sauce pan. Combine 1 cup of water, peanut butter, maple syrup, soy sauce, ginger, and garlic in a saucepan. Bring to a boil, stirring the sauce continuously and cook until heated thoroughly, 5 to 7 minutes on medium-low heat.
- Add vegetables and red pepper flakes to the sauce, and cook for 10 minutes. Season with salt.
- Add noodles to the sauce and vegetables. Mix and serve.
