Slow Cooker Chicken and Beetroot Delight

This Slow Cooker Chicken & Beetroot Delight is a unique, rich, and flavorful dish where tender chicken slowly cooks with earthy, slightly sweet beetroot. Ingredients

  • 4 chicken thighs or drumsticks
  • 4 medium beets peeled & chopped
  • 3 tbsp olive oil
  • 3 cloves garlic sliced or minced
  • 1 tbsp honey or maple syrup
  • 1 tbsp lemon juice or vinegar
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp dried thyme or oregano
  • 1/2 cup chicken broth

Instructions

  • Peel and chop beetroot into chunks.
  • Season chicken with salt, pepper, and paprika.
  • Add beetroot to the bottom of the slow cooker.
  • Place chicken on top.
  • Add garlic evenly over everything.
  • Drizzle olive oil and honey.
  • Add lemon juice and chicken broth.
  • Sprinkle thyme or oregano.
  • Cover and cook: Low: 6–7 hours – or – High: 3–4 hours
  • Serve hot with rice, cauliflower rice, mashed potatoes, or bread.
  • Spoon juices over for extra flavor.
