Healthy Pancakes
These gluten-free pancakes are tasty – and healthier than the typical pancake. Try them – you'll like them!

Ingredients
- 1 apple peeled, cored, and chopped
- 2 eggs
- 2/3 c quick oats
- 1/2 t baking soda
- 1/2 t baking powder
- 2 T yogurt
- 1 1/2 T maple syrup
- 1 t cinnamon
- 1 t vanilla
Instructions
- Blend the eggs with maple syrup, baking soda, baking powder, and yogurt until creamy and fluffy.
- Blend in the chopped and peeled apple.
- Add in the oats, vanilla, and cinnamon and let stand for 2 minutes.
- Blend until smooth.
- Heat a non-stick pan to medium, cover with butter or coconut oil.
- Pour batter to form palm-sized pancakes. Reduce heat a bit.
- When bubbles come up and edges look done, flip.
