Healthy Pancakes

These gluten-free pancakes are tasty – and healthier than the typical pancake. Try them – you'll like them!

Ingredients

  • 1 apple peeled, cored, and chopped
  • 2 eggs
  • 2/3 c quick oats
  • 1/2 t baking soda
  • 1/2 t baking powder
  • 2 T yogurt
  • 1 1/2 T maple syrup
  • 1 t cinnamon
  • 1 t vanilla

Instructions

  • Blend the eggs with maple syrup, baking soda, baking powder, and yogurt until creamy and fluffy.
  • Blend in the chopped and peeled apple.
  • Add in the oats, vanilla, and cinnamon and let stand for 2 minutes.
  • Blend until smooth.
  • Heat a non-stick pan to medium, cover with butter or coconut oil.
  • Pour batter to form palm-sized pancakes. Reduce heat a bit.
  • When bubbles come up and edges look done, flip.
