Cauliflower Salad
This is a healthier version of potato salad.
Ingredients
- 1 head cauliflower steamed and cut into bite-sized chunks
- 6 eggs
Dressing
- 1/3 cup mayo or Miracle Whip
- 3 tbs mustard
- 3 tbs pickle relish
Instructions
- Boil eggs and cool before peeling. Chop into bite-sized chunks.
- Steam cauliflower and cut into bite-sized chunks.
- Mix dressing ingredients. Then fold dressing into cauliflower chunks.
